  • 8 oz dried noodles (egg noodles or rice noodles)
  • 2 tablespoons vegetable oil
  • 1 cup mixed vegetables (carrots, bell peppers, and broccoli) Feel free to swap vegetables based on seasonality.
  • 2 cloves garlic, minced
  • 1 medium onion, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce Optional for added depth.
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Optional proteins: chicken, beef, shrimp, or tofu Customize according to your preference.

Method
 

Cooking
  1. Cook the noodles according to package instructions. Drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add the sliced onions and minced garlic, sautéing until fragrant and translucent.
  4. Add the mixed vegetables and stir-fry for 3-4 minutes until crisp-tender.
  5. If using proteins, add them now and cook until done.
  6. Add the drained noodles to the skillet. Pour in the soy sauce, oyster sauce (if using), and sesame oil.
  7. Toss everything to combine and stir-fry for another 2-3 minutes until noodles are slightly crispy.

Notes
