  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
Wet Ingredients
  • 2 large eggs Or flax eggs for a vegan option
  • 1 cup whole milk Almond milk or oat milk are great alternatives
  • 0.5 cups vegetable oil Can use melted coconut oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 0.5 cups strong brewed coffee Optional, enhances the chocolate flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until well combined.
  3. In another bowl, mix the eggs, milk, oil, and vanilla extract until smoothly blended.
  4. Pour the wet mixture into the dry ingredients and stir gently until combined.
Baking
  1. Carefully add the boiling water (and coffee if using).
  2. Pour the batter into a greased 9×13 inch baking pan.
  3. Bake for about 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  4. Allow the cake to cool in the pan for a bit before transferring it to a wire rack to cool completely.
