  • 2 pieces ribeye steaks (or your preferred cut) Sirloin or filet mignon can be used for leaner options.
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • ½ cup heavy cream Can substitute with half-and-half or vegan cream.
  • ½ cup grated parmesan cheese Nutritional yeast can be used for a dairy-free option.
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Method
 

Preparation
  1. Let the steaks come to room temperature for about 20 minutes.
  2. Generously season both sides with salt and pepper.
Cooking the Steak
  1. Heat a large skillet over medium-high heat and add 2 tablespoons of butter.
  2. Once the butter melts and froths, add the steaks to the skillet and cook for 4-5 minutes on each side for medium-rare.
  3. After cooking, let the steaks rest on a plate tented with aluminum foil.
Making the Sauce
  1. In the same skillet, reduce heat to medium and add the remaining butter until it melts.
  2. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Pour in the heavy cream, stirring gently and bringing it to a bubble.
  4. Reduce heat further and whisk in the grated parmesan until melted.
  5. Season with salt and pepper to taste.
Serving
  1. Slice the rested steaks and drizzle the sauce over the top.
  2. Garnish with chopped fresh parsley.

Notes
