  • 1 (5-7 pound) prime rib roast, bone-in
  • 4-5 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)
  • 2 tablespoons fresh thyme, chopped (or 1 tablespoon dried)
  • 2 tablespoons olive oil
  • to taste Salt
  • to taste Black pepper
  • 2 tablespoons Dijon mustard (optional) for a flavor twist

Method
 

Preparation
  1. Bring the roast to room temperature by taking it out of the fridge about 2 hours before cooking.
  2. Preheat your oven to 450°F (232°C).
  3. In a small bowl, mix together the minced garlic, chopped herbs, olive oil, salt, pepper, and mustard (if using).
  4. Pat the roast dry with paper towels and rub the garlic herb mixture all over it, ensuring every inch is covered.
Cooking
  1. Place the roast bone-side down in a roasting pan and roast in the preheated oven for about 15-20 minutes.
  2. Reduce the oven temperature to 325°F (163°C) and continue roasting, typically about 15-20 minutes per pound.
  3. Use a meat thermometer to check for doneness: aim for 130°F (54°C) for medium-rare or 140°F (60°C) for medium.
  4. Once the desired temperature is reached, remove the roast and let it rest for 20-30 minutes before slicing.
