- Drizzle the bottom of your slow cooker with olive oil.
- Place the chicken breasts in a single layer and sprinkle the garlic-Parmesan mixture over them.
- Arrange the halved baby potatoes around the chicken.
- Pour the chicken broth into the slow cooker to add moisture.
- Cover the slow cooker, set it to low, and let it cook for 6 to 8 hours, or on high for about 4 hours.
- Check that the chicken is fully cooked and shreds easily with a fork, and that the potatoes are tender.
- Give everything a gentle stir to mix the flavors before serving.
