  • 4 pieces boneless, skinless chicken breasts (or thighs) You can use dark meat if preferred.
  • 1 pound baby potatoes (halved) Regular potatoes can be used, cut into chunks.
  • 4 cloves garlic, minced More garlic equals more flavor!
  • 1 cup grated Parmesan cheese Freshly grated is best, but pre-grated works too.
  • 1/2 cup chicken broth Vegetable broth can be used for a lighter taste.
  • 1 teaspoon Italian seasoning Or use your favorite herb blend.
  • to taste Salt and pepper Do not hold back on seasoning!
  • 2 tablespoons olive oil Provides lovely depth of flavor.
  • to taste Fresh parsley or chives for garnish Optional, but adds a fresh touch.

Method
 

Preparation
  1. Wash and cut the potatoes in half if using whole ones to ensure even cooking.
  2. In a bowl, combine the Parmesan cheese, minced garlic, Italian seasoning, salt, and pepper. Stir well to mix the flavors together.
Cooking
  1. Drizzle the bottom of your slow cooker with olive oil.
  2. Place the chicken breasts in a single layer and sprinkle the garlic-Parmesan mixture over them.
  3. Arrange the halved baby potatoes around the chicken.
  4. Pour the chicken broth into the slow cooker to add moisture.
  5. Cover the slow cooker, set it to low, and let it cook for 6 to 8 hours, or on high for about 4 hours.
  6. Check that the chicken is fully cooked and shreds easily with a fork, and that the potatoes are tender.
  7. Give everything a gentle stir to mix the flavors before serving.

Notes
