  • 2 medium zucchinis, sliced into half-moons
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced Use more if you're a garlic lover!
  • 1/2 cup grated Parmesan cheese Or a dairy-free alternative if you prefer.
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • Fresh parsley, chopped for garnish Optional

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine shrimp, zucchini, olive oil, minced garlic, Italian seasoning, salt, and pepper. Stir until everything is well coated.
Cooking
  1. Spread the mixture evenly onto a large baking sheet, ensuring the shrimp and zucchinis have space between them.
  2. Sprinkle the grated Parmesan cheese over the shrimp and zucchinis.
  3. Roast in the oven for about 10-12 minutes, or until shrimp are opaque and curling slightly, and zucchinis are tender.
Serving
  1. Remove from the oven and sprinkle with fresh parsley before serving.

Notes
