  • 1 each lemon (juiced)

Vegetables
  • 1 cup cherry tomatoes (halved)
  • 1 cup baby spinach (or arugula)
  • 1/4 cup red onion (thinly sliced)
  • 1/4 cup fresh parsley (chopped, optional)
Optional Add-ins

Method
 

Cooking the Tortellini
  1. Cook the tortellini according to the package instructions, ensuring they remain al dente.
  2. Drain the tortellini and let it cool slightly.
Preparing the Dressing
  1. In a large bowl, whisk together olive oil, minced garlic, grated Parmesan, lemon juice, salt, and pepper until creamy.
Combining Ingredients
  1. Add the cooled tortellini to the dressing and gently stir to coat.
  2. Toss in cherry tomatoes, spinach, red onion, and parsley, then mix gently.
  3. Adjust seasoning if needed.
