Ingredients
  

For the Shrimp
  • 1 lb large shrimp, peeled and deveined You can use frozen, just thaw them first.
  • 4 cloves garlic, minced Add more if you’re a garlic lover!
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 tablespoon fresh lemon juice Or lime for a twist.
For the Bowl
  • 2 cups cooked quinoa or jasmine rice You can use brown rice or cauliflower rice for a healthier option.
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, lightly wilted Substitute with kale or arugula.
  • Fresh basil or parsley, for garnish
  • Optional: crushed red pepper flakes for added heat

Method
 

Cooking the Shrimp
  1. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook until it becomes a light golden brown.
  2. Quickly toss in the shrimp and cook for about 3-4 minutes until they turn pink. Season with salt and pepper and add in the lemon juice.
Preparing the Bowl
  1. Heat the cooked quinoa or rice in a separate pot over low heat to warm it up.
  2. Add the cherry tomatoes and spinach to the skillet with the shrimp for the last minute of cooking.
  3. Scoop the quinoa or rice into bowls and top generously with the shrimp and vegetable mixture.
  4. Garnish with fresh herbs and a sprinkle of red pepper flakes if desired.
