Ginger Beef and Onion Stir Fry

A quick and easy ginger beef and onion stir fry that comes together in just 20 minutes, combining tender beef, crisp onions, and fragrant ginger for a delightful meal.

Ingredients
  

Beef Marinade
  • 1 lb Beef (flank steak or sirloin, thinly sliced against the grain)
  • 2 tablespoons Cornstarch
  • 2 tablespoons Soy sauce (use low sodium if preferred)
  • 1 tablespoon Sesame oil
Stir-Fry Ingredients
  • 2 tablespoons Vegetable oil (for stir-frying)
  • 1 large Onion, sliced
  • 2-3 cloves Garlic, minced
  • 2-3 tablespoons Fresh ginger, minced (adjust to taste)
  • 1 bell pepper (red, yellow, or green), sliced (optional) For a pop of color
  • to taste Salt
  • to taste Black pepper
  • for garnish Green onions, sliced

Method
 

Preparation
  1. In a bowl, combine the sliced beef with cornstarch, soy sauce, and a pinch of salt. Let it marinate for about 10 minutes.
Cooking
  1. Heat a large skillet or wok over medium-high heat. Add the vegetable oil once hot.
  2. Carefully toss in the marinated beef in a single layer and sear it for about 1-2 minutes without stirring, then flip and cook until browned but slightly pink.
  3. Remove the beef from the skillet and set it aside.
  4. In the same skillet, add more oil if necessary and the sliced onions. Stir-fry for about 2-3 minutes.
  5. Add the minced garlic and ginger, stirring for about 30 seconds until fragrant.
  6. If using bell peppers, toss them in and stir-fry for another minute.
  7. Return the beef to the skillet, mix everything together, and heat through for another minute. Adjust seasoning with salt and black pepper.
  8. Garnish with green onions before serving.
