Ingredients
  

For the Stir Fry
  • 1 lb chicken breast, diced (or firm tofu for a vegetarian option)
  • 1 cup fresh pineapple, diced (canned works too!)
  • 1 bell pepper (red, yellow, or green), sliced
  • 1 cup snap peas or green beans
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated or minced
  • 2 tablespoons vegetable oil (or sesame oil for additional flavor)
For the Glaze
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 2 tablespoons brown sugar (can substitute with maple syrup)
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (to thicken)

Method
 

Cooking
  1. Heat oil in a large skillet or wok over medium-high heat until shimmering.
  2. Add diced chicken (or tofu) and sauté until golden brown and cooked through, about 5-7 minutes.
  3. Add minced garlic and ginger, and sauté for about one minute.
  4. Add bell pepper, snap peas, and onion; cook for another 3-4 minutes until vegetables are tender-crisp.
  5. Stir in diced pineapple and let it caramelize slightly, about 2 minutes.
  6. Whisk together soy sauce, brown sugar, rice vinegar, and cornstarch mixture, then pour over stir fry and cook until thickened.
  7. Remove from heat and allow to settle before serving.
