Preparation
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans with baking spray or butter.
- In a large bowl, whisk together the gluten-free flour, baking powder, baking soda, salt, and ground cinnamon.
- In another mixing bowl, combine both sugars and oil, whisking until blended. Add the eggs one at a time, mixing until each is fully incorporated.
- Stir in the mashed bananas, crushed pineapple, chopped pecans, and vanilla.
- Gradually fold in the dry ingredients until just combined.
- Pour the batter into the prepared pans and smooth out the tops.
Baking
- Bake for about 25-30 minutes, or until a toothpick comes out clean when inserted into the center.
- Let the cakes cool in the pans for about 10 minutes, then transfer them to wire racks to cool completely.
Frosting
- Beat the softened cream cheese and butter together until light and fluffy.
- Gradually add the powdered sugar, mixing until smooth. Add a splash of milk to reach your desired consistency.
- Spread the frosting generously between the cooled cake layers and over the top of the cake.
