  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup coconut oil (melted) or unsalted butter
  • 1/4 cup brown sugar
  • 1/4 cup coconut sugar or granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg Substitute with a flax egg for a vegan option.
Add-ins
  • 1 cup chocolate chips Use dairy-free if desired.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the oat flour, baking soda, and salt.
  3. In another bowl, combine the melted coconut oil (or butter) with both sugars until well combined.
  4. Add in the vanilla extract and the egg (or flax egg). Whisk until blended.
  5. Gently combine the dry ingredients with the wet mixture until no more flour streaks remain.
  6. Fold in the chocolate chips evenly.
Baking
  1. Using a cookie scoop or tablespoon, drop rounded balls onto a parchment-lined baking sheet, leaving space between each cookie.
  2. Bake for about 10-12 minutes, or until the edges start turning golden.
  3. Let the cookies cool as they will firm up after baking.
