- Heat the olive oil in a large pot over medium heat.
- Add the chopped onions and sauté until soft and translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the mixed vegetables and sauté until they begin to soften.
- Sprinkle the flour over the vegetables and stir to combine.
- Gradually pour in the chicken broth, stirring constantly to avoid clumps.
- Add the shredded chicken and dried thyme. Bring to a gentle simmer for about 5-7 minutes.
- Reduce heat slightly and pour in the heavy cream. Stir until smooth.
- Season with salt and pepper and gently fold in the gnocchi.
- Allow the gnocchi to cook in the warm sauce for about 3-4 minutes.
- If desired, transfer to a baking dish and bake at 375°F (190°C) for about 20 minutes until bubbly and golden.
