- Heat a generous drizzle of oil in a large pot over medium heat.
- Add the chopped onions and sauté until they turn translucent, about 3-4 minutes.
- Stir in the minced garlic and diced bell pepper, cooking for another 2-3 minutes.
- Add the ground beef and cook until browned, breaking it apart. Drain excess fat if necessary.
- Stir in the diced tomatoes, broth, paprika, Italian seasoning, salt, and pepper.
- Let the mixture simmer, then add the elbow macaroni.
- Cover and cook on low for about 10-12 minutes, stirring occasionally, until pasta is tender.
- Stir in the shredded cheese until melted.
