  • 1 cup cherry tomatoes, halved Grape tomatoes can be used as a substitute.
  • 1/2 cup red onion, thinly sliced Thinly sliced for better flavor distribution.
  • 1/2 cup kalamata olives, pitted and halved Any good-quality black or green olives can be used.
  • 1 cup crumbled feta cheese Dairy-free alternatives are available.
Dressing Ingredients
  • 1/4 cup olive oil Extra virgin olive oil is preferred.
  • 2 tablespoons fresh lemon juice Freshly squeezed for best flavor.
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
Optional Toppings
  • 1/4 cup toasted pine nuts or walnuts For added crunch.

Method
 

Preparation
  1. Bring a pot of salted water to a boil.
  2. Blanch the trimmed asparagus for 2-3 minutes until bright green and tender-crisp.
  3. Transfer the asparagus to a bowl of ice water to stop the cooking process.
  4. In a large bowl, combine the cherry tomatoes, red onion, kalamata olives, and crumbled feta.
  5. Drain the cooled asparagus and chop it into bite-sized pieces.
  6. Gently fold the chopped asparagus into the bowl with the other ingredients.
Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, dried oregano, and a pinch of salt and pepper.
  2. Drizzle the dressing over the salad and toss gently to coat.
Serving
  1. Let the salad rest for about 10 minutes before serving to allow flavors to mingle.
