Greek Chicken Bowls

Ingredients
  

Chicken and Marinade Ingredients
  • 1.5 lb boneless, skinless chicken thighs or breasts (thighs are juicier)
  • 3 tbsp olive oil, divided
  • 1 Juice and zest of 1 lemon
  • 3 cloves garlic, minced
  • 1 tsp dried oregano (or 1 tbsp fresh, chopped)
  • 1/2 tsp smoked paprika
  • Salt and black pepper, to taste
Vegetable Ingredients
  • 1 cup cooked quinoa or rice (see notes)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/3 cup red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup crumbled feta
  • 1 cup mixed greens or chopped romaine
Tzatziki Ingredients
  • 1 cup Greek yogurt
  • 1/2 cup cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp chopped dill or mint
  • Salt to taste

Method
 

Marinating the Chicken
  1. Whisk 2 tbsp olive oil, lemon juice and zest, garlic, oregano, paprika, salt, and pepper in a bowl.
  2. Add the chicken, toss to coat, and let sit 15–30 minutes at room temperature (or refrigerate up to 2 hours).
Making the Tzatziki
  1. Grate the cucumber, squeeze out excess moisture with a towel or fine mesh.
  2. Mix into Greek yogurt with minced garlic, lemon juice, dill, and a pinch of salt.
  3. Taste and adjust. Chill before serving.
Cooking the Chicken
  1. Heat a skillet or grill over medium-high heat and add the remaining olive oil.
  2. Cook the chicken 4–6 minutes per side until nicely browned and internal temperature reads 165°F (74°C).
  3. Let the chicken rest for 5 minutes, then slice.
Assembling the Bowls
  1. Assemble bowls with a base of quinoa or rice, mixed greens, cucumber, tomatoes, red onion, and olives.
  2. Top with sliced chicken, tzatziki, and sprinkle with feta.
  3. Drizzle with extra virgin olive oil and a crack of black pepper to finish.
  4. Serve with toasted pita if desired.
