Method
Marinating the Chicken
- Whisk 2 tbsp olive oil, lemon juice and zest, garlic, oregano, paprika, salt, and pepper in a bowl.
- Add the chicken, toss to coat, and let sit 15–30 minutes at room temperature (or refrigerate up to 2 hours).
Making the Tzatziki
- Grate the cucumber, squeeze out excess moisture with a towel or fine mesh.
- Mix into Greek yogurt with minced garlic, lemon juice, dill, and a pinch of salt.
- Taste and adjust. Chill before serving.
Cooking the Chicken
- Heat a skillet or grill over medium-high heat and add the remaining olive oil.
- Cook the chicken 4–6 minutes per side until nicely browned and internal temperature reads 165°F (74°C).
- Let the chicken rest for 5 minutes, then slice.
Assembling the Bowls
- Assemble bowls with a base of quinoa or rice, mixed greens, cucumber, tomatoes, red onion, and olives.
- Top with sliced chicken, tzatziki, and sprinkle with feta.
- Drizzle with extra virgin olive oil and a crack of black pepper to finish.
- Serve with toasted pita if desired.
