Prepare Tzatziki Sauce
- In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, and a pinch of salt. Mix well until smooth and creamy.
Prepare Flatbread
- Preheat your oven to 400°F (200°C).
- Lay the flatbreads on a baking sheet, and drizzle them lightly with olive oil.
- Spread a generous layer of tzatziki over each flatbread.
- Layer the halved cherry tomatoes, diced cucumber, red onion slices, feta cheese, and optional chicken or lamb on top. Sprinkle with olives, salt, and pepper.
Bake and Serve
- Bake for about 10-12 minutes, or until the flatbreads are golden brown and crispy.
- Allow them to cool for a minute, then drizzle with more olive oil and garnish with freshly chopped oregano or parsley before serving.
