Cooking the Soup
- Grab a large pot and bring your chicken broth to a gentle boil.
- While that warms up, season the chicken with salt and pepper, then add it to the pot.
- Allow the chicken to poach gently in the broth for around 15-20 minutes, until fully cooked and tender.
- Once the chicken is ready, remove it from the pot and set it aside to cool.
- In the same pot, toss in your uncooked orzo or rice and let it simmer for about 10 minutes, or until al dente.
- While that’s cooking, shred the chicken into bite-sized pieces.
Making the Avgolemono
- In a mixing bowl, whisk together the eggs, lemon juice, and zest until smooth and frothy.
- Gradually ladle some hot broth into the egg mixture, slowly to temper the eggs and prevent scrambling.
- Pour the egg mixture back into the pot, stirring gently to combine.
- Bring the soup to a gentle heat again—just warm, not boiling!
- Add the shredded chicken and taste. Adjust seasoning with more salt, pepper, or lemon juice as needed.
- Serve warm, garnished with fresh dill or parsley.
