Ingredients
  

Pasta Ingredients
  • 8 oz Pasta (rotini or penne recommended)
Vegetable Ingredients
  • 1 large Cucumber, diced
  • 1 cup Cherry tomatoes, halved
  • 1/2 Red onion, thinly sliced
  • 1 Bell pepper, diced Bell pepper varieties are great choices.
  • 1/2 cup Kalamata olives, pitted and sliced
Dressing Ingredients
  • 1/4 cup Olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Oregano, dried
  • Salt and pepper, to taste
Topping Ingredients
  • 1 cup Feta cheese, crumbled For a vegan option, substitute with avocado.
  • Fresh parsley or basil, for garnish (optional)

Method
 

Preparation
  1. Bring a large pot of salted water to boil. Once boiling, add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water.
  2. While the pasta cools, chop the cucumber, halved cherry tomatoes, and diced bell pepper. Slice the red onion thinly.
  3. In a large mixing bowl, combine all the chopped ingredients.
Combining Ingredients
  1. Add the cooled pasta to the bowl with the vegetables.
  2. Drizzle with olive oil and red wine vinegar, then sprinkle oregano, salt, and pepper. Toss everything together gently.
  3. Crumble feta over the top and mix lightly until well-coated.

Notes
