  • 3 ripe tomatoes, chopped (heirloom variety adds extra flavor) Choose ripe, juicy tomatoes for the best flavor.
  • 1 piece English cucumber, diced (peeling is optional) Peeling is not necessary for thin-skinned cucumbers.
  • 1 piece red onion, thinly sliced (or a sweet onion for milder flavor) Soak in cold water to mellow the flavor if desired.
  • 1 piece bell pepper, diced (red, yellow, or green for color) Any color bell pepper can be used.
  • 200 g feta cheese, crumbled (or vegan feta for a plant-based version) Add crumbled feta for creaminess.
  • 1 cup Kalamata olives, pitted (green olives can be used for a twist) Mix olives throughout the salad.
  • 4 tablespoons extra virgin olive oil Use high-quality olive oil for best flavor.
  • 2 tablespoons red wine vinegar (or a splash of lemon juice for zing) Vinegar can be substituted with lemon juice.
  • Salt and black pepper to taste Season according to preference.
  • Optional herbs: fresh oregano, parsley, or dill for garnish Herbs can enhance the flavor if added.

Preparation
  1. Dice the tomatoes into bite-sized pieces, allowing their juices to flow into a bowl for flavor.
  2. Slice the cucumber in half and dice it into half-moons, then add it to the bowl with the tomatoes.
  3. Thinly slice the onion and soak in cold water if desired to mellow the flavor before adding.
  4. Add the diced bell pepper to the bowl for color and crunch.
  5. Crumble the feta cheese over the mixture, being careful not to overmix.
  6. Pit the Kalamata olives and toss them into the salad.
  7. In a separate small bowl, whisk together olive oil and red wine vinegar, then drizzle over the salad.
  8. Finally, season with salt and pepper to taste and mix gently. Optionally sprinkle fresh herbs on top.
