Ingredients
  

Main Ingredients
  • 4 pieces bone-in, skin-on chicken thighs (about 2 lbs) Breasts can also be used, but reduce cooking time.
  • 1 lb small potatoes (baby Yukon or fingerlings), halved
  • 1 large red onion, cut into wedges
  • 1 piece red bell pepper, cut into chunks
  • 1 cup cherry tomatoes
  • 3 tbsp olive oil
  • 1 large lemon, juiced (about 3 tbsp) + lemon slices for roasting
  • 4 cloves garlic, minced
  • 2 tsp dried oregano (or 1 tbsp fresh chopped)
  • 1 tsp dried thyme (optional)
  • 1 tsp smoked paprika
  • 1/2 tsp red pepper flakes (optional)
  • to taste salt and freshly ground black pepper
  • 1/2 cup pitted Kalamata olives (optional)
  • 1/4 cup crumbled feta for finishing (optional)

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, paprika, red pepper flakes, salt, and pepper.
  3. Toss the chicken and vegetables in this mixture until evenly coated. Let the mixture sit for 10–15 minutes.
Cooking
  1. Arrange everything skin-side up on a sheet pan with a rim, leaving space between pieces for air circulation.
  2. Nestle lemon slices amongst the chicken and veggies and scatter olives if using.
  3. Roast for 35–45 minutes, until the chicken has golden, crisp skin and reaches an internal temp of 165°F (74°C).
  4. For extra browning, switch to broil for 2–3 minutes at the end, watching carefully.
  5. Remove from the oven, let rest for 5 minutes, then sprinkle with feta and a few extra squeezes of lemon before serving.

Notes

Make it lighter by using skinless chicken. Gluten-free and paleo-friendly as written. Substitute potatoes for cauliflower for a lower-carb option.
