  • 1 bunch green asparagus (trimmed)
  • 3 large eggs
  • 1 cup heavy cream (or a non-dairy option, like coconut cream)
  • 1 cup grated cheese (Gruyère or a sharp cheddar work well, or use vegan cheese)

  • 1 teaspoon olive oil (for drizzling)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Roll out the puff pastry onto a baking sheet lined with parchment paper.
  2. Trim the tough ends off the asparagus and spread them evenly over the pastry.
Custard Mixture
  1. In a mixing bowl, whisk together the eggs and heavy cream until smooth. Add in the grated cheese, then season with salt and pepper to taste.
  2. Pour the mixture over the asparagus on the pastry, allowing it to seep between the stalks. Drizzle olive oil on top.
Baking
  1. Bake in the preheated oven for about 25-30 minutes, until the edges are golden brown and the center is slightly jiggly.
  2. Remove from oven and let cool for a few minutes before slicing.
