Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts Can be substituted with shrimp or grilled tofu
  • Salt and pepper, to taste
  • 1 tablespoon olive oil For searing the chicken
For the Green Goddess Sauce
  • 1 piece ripe avocado
  • 1 cup fresh basil leaves
  • ½ cup fresh parsley leaves
  • 2 tablespoons fresh chives, chopped (or green onions)
  • Juice of 1 lemon
  • ¼ cup olive oil
  • 2 tablespoons Greek yogurt or vegan option (coconut cream works great)
  • Salt and pepper, to taste
  • 1 clove garlic, minced (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts generously with salt and pepper on both sides.
  3. In an oven-safe skillet over medium heat, drizzle a tablespoon of olive oil.
  4. Once the oil shimmers, gently place the chicken breasts in the pan and sear for about 5 minutes on each side until they are beautifully golden brown.
Making the Sauce
  1. In a blender or food processor, combine the avocado, basil, parsley, chives, lemon juice, olive oil, Greek yogurt, and garlic, if using.
  2. Blend until it reaches a silky smooth consistency and season with salt and pepper to taste.
Cooking
  1. Pour the Green Goddess sauce over the chicken in the skillet, spreading it evenly.
  2. Transfer the skillet to the preheated oven and bake for about 15-20 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
