Grilled Artichokes

Main Ingredients
  • 2 large artichokes Fresh artichokes are preferred.
  • 1 whole lemon For water and drizzle.
  • 4 cloves garlic, minced Minced for infusion.
  • 1/4 cup olive oil (extra virgin) Best quality for flavor.
  • Salt and fresh pepper, to taste Adjust according to preference.
  • Fresh herbs (optional): rosemary or thyme For added flavor.
  • Red pepper flakes (optional) For added heat.

Method
 

Preparation
  1. Fill a large pot with water and squeeze the juice of one lemon into it to prevent browning.
  2. Trim about an inch off the tops of the artichokes and slice off the stem to sit flat.
  3. Peel off the outer leaves until reaching the tender, light green ones.
  4. Remove the fuzzy choke in the center with a spoon.
  5. Place the prepared artichokes in lemon water and simmer for about 15-20 minutes until just tender.
Flavoring and Grilling
  1. Mix together olive oil, minced garlic, salt, and pepper in a bowl. Add chopped herbs and red pepper flakes if desired.
  2. Remove the tender artichokes from the pot, cool slightly, and slice each in half lengthwise.
  3. Brush the cut sides generously with the garlic oil mixture.
  4. Preheat the grill to medium-high heat and place the artichokes cut-side down.
  5. Grill for about 4-5 minutes until charred, then flip and grill for another 3-4 minutes.
  6. Remove from the grill, drizzle with lemon juice, and sprinkle with salt before serving.

Notes
