Ingredients
  

For the Chicken Marinade
  • 2 pieces boneless, skinless chicken breasts
  • 3 tablespoons olive oil (or avocado oil) Substitute with avocado oil for a different flavor.
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
For the Salad
  • 4 cups mixed greens (spinach, arugula, romaine)
  • 1 cup cherry tomatoes, halved
  • 1 piece cucumber, diced
  • ½ medium red onion, thinly sliced (optional)
  • 1 piece avocado, sliced Adds creaminess and healthy fats.
  • ¼ cup feta cheese Omit for a dairy-free version.
For the Dressing
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons honey or agave syrup
  • Salt and pepper to taste
  • Extra olive oil for drizzling

Method
 

Preparation
  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper for the marinade.
  2. Place the chicken breasts in the marinade, making sure they are well-coated. Let marinate for about 30 minutes.
  3. While the chicken is marinating, combine mixed greens, cherry tomatoes, cucumber, red onion (if using), and avocado in a large bowl.
  4. In a small bowl, whisk together balsamic vinegar, honey, salt, pepper, and extra olive oil for the dressing.
Cooking
  1. Preheat the grill to medium-high heat.
  2. Grill the marinated chicken for about 6-7 minutes on each side until it reaches an internal temperature of 165°F and has grill marks.
  3. Once cooked, let the chicken rest for a few minutes, then slice it thinly.
Assembly
  1. Place the sliced chicken atop the salad and drizzle the dressing over it.
  2. Sprinkle feta cheese on top if desired before serving.
