Ingredients

Main Ingredients
  • 2 pieces Boneless and skinless chicken breasts Can substitute with tofu or tempeh for a vegan option.
  • 1/2 cup Teriyaki sauce Try a low-sodium version if you're watching your salt intake.
  • 1 cup Fresh pineapple slices Canned works too, but fresh is always better.
  • 4 pieces Burger buns Whole grain or gluten-free for a healthier touch.
  • 1 cup Lettuce Use your favorite type, like romaine or butter lettuce.
  • 1 large Tomato, sliced Adds a juicy freshness.
  • 1/4 cup Mayo Vegan mayo can make a wonderful swap.
Optional Toppings
  • to taste Red onion slices For added crunch.
  • to taste Jalapeños For heat.
  • to taste Avocado For extra creaminess.

Method

Preparation
  1. Marinate the chicken breasts in teriyaki sauce for at least 30 minutes, or up to 4 hours in the fridge for best flavor.
  2. Preheat your grill to medium-high heat.
Grilling
  1. Remove the marinated chicken from the fridge, allowing excess marinade to drip off.
  2. Grill the chicken for 6-7 minutes on each side, flipping once, until cooked through (internal temperature of 165°F).
  3. Grill pineapple slices for about 3-4 minutes on each side until caramelized.
Assembly
  1. Spread a thin layer of mayo on each bun.
  2. Layer the lettuce, grilled chicken, and grilled pineapple on the buns.
  3. Top with sliced tomato and any optional toppings you desire.
  4. Serve immediately.

Notes

Feel free to swap chicken for grilled shrimp or marinate tofu for a vegan version. For a different flavor, use barbecue sauce instead of teriyaki. Make ahead by marinating chicken or grilling in advance.
