Preparation
- Ensure each chicken breast is evenly thick for uniform cooking.
- In a large bowl, whisk together soy sauce, fish sauce, brown sugar, lime juice, garlic, ginger, and vegetable oil.
- Add chicken to the marinade, ensuring it is fully coated. Let it marinate for at least 30 minutes, ideally a couple of hours in the fridge.
Grilling
- Preheat the grill to medium-high heat.
- Remove chicken from the marinade, allowing excess to drip off.
- Place chicken on the grill and cook for about 6-7 minutes on each side, until it reaches an internal temperature of 165°F.
- Let the chicken rest for a few minutes before slicing.
- Garnish with fresh cilantro if desired and serve with lime wedges.
