  • 12 ounces Udon Noodles (fresh or dried)
  • 2 tablespoons Olive Oil (or sesame oil for richer flavor)
  • 3 tablespoons Soy Sauce (low sodium recommended)
  • 2 cloves Garlic, minced
  • 1 cup Broccoli florets Feel free to mix and match with other vegetables.
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • Proteins (optional): cooked chicken, shrimp, tofu, or tempeh Add any proteins you prefer.
  • Sesame Seeds (for garnish)
  • 2 Green Onions, sliced (for garnish)

Method
 

Preparation
  1. If using dried udon, boil according to package guidelines until just tender, then drain and rinse with cold water. If using fresh udon, soak in hot water briefly.
  2. Preheat your grill to medium-high heat or heat up a stovetop grill pan.
  3. In a large bowl, combine the olive oil, soy sauce, and minced garlic. Add the cooked udon noodles and toss until well coated.
  4. Add vegetables and proteins of choice to the bowl and toss together. Let marinate for a few minutes.
Grilling
  1. Once the grill is hot, place the noodle mixture on the grill, spreading it out evenly.
  2. Cook without stirring for about 5 minutes to develop char marks.
  3. Gently toss and grill for an additional 3-5 minutes until everything is nicely charred.
Serving
  1. Transfer the grilled noodles to a platter and garnish with sesame seeds and green onions. Drizzle with extra soy sauce if desired.
