  • 1 lb ground beef (lean, grass-fed recommended)
  • 1 large sweet potato, peeled and diced
  • 2 medium zucchinis, diced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp Italian seasoning (or your favorite herbs)
  • Salt and pepper, to taste
  • 2 tbsp olive oil (or any preferred cooking oil)
Optional Ingredients
  • Red pepper flakes for a touch of heat
  • Fresh parsley or basil for garnish

Method
 

Cooking
  1. Heat the olive oil in a large skillet over medium heat until shimmering.
  2. Add the chopped onion and sauté until softened and fragrant, about 3-5 minutes.
  3. Add the minced garlic and stir for another 30 seconds, being careful not to burn it.
  4. Add the ground beef, breaking it apart with a spatula as it cooks, and let it brown evenly for about 5-7 minutes.
  5. Once the beef is mostly cooked through, season it with salt, pepper, paprika, and Italian seasoning.
  6. Stir in the diced sweet potatoes, cover the skillet, and let them cook for about 10-15 minutes until fork-tender.
  7. Add the diced zucchini and cook for an additional 5 minutes until the zucchini is tender but still has a bit of bite.
  8. Taste and adjust seasonings if needed, and sprinkle with red pepper flakes if desired.

Notes
