Ingredients
  

For the Cupcakes
  • 1 cup Guinness stout Try substituting with a non-alcoholic stout if desired.
  • 1 cup unsalted butter, cubed and softened
  • 1.75 cups granulated sugar
  • 0.75 cups unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs, at room temperature
  • 1 cup sour cream Greek yogurt works as a substitute.
For the Frosting
  • 8 oz cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tablespoons milk or heavy cream
  • 1 teaspoon vanilla extract

Method
 

Baking Your Cupcakes
  1. Preheat your oven to 350°F (175°C) and line your cupcake pan with paper liners.
  2. In a medium saucepan over low heat, combine the Guinness and butter. Stir until the butter melts completely.
  3. Whisk in the sugar and cocoa powder until well-blended, then remove from heat and let it cool slightly.
  4. In a separate bowl, mix together the flour, baking powder, baking soda, and salt.
  5. In a large bowl, whisk together the eggs and sour cream until creamy.
  6. Gradually add the cooled Guinness mixture to the egg mixture, stirring until well combined.
  7. Slowly incorporate the dry ingredients until just mixed; avoid overmixing.
  8. Scoop the batter into your lined cupcake pan, filling each cup about two-thirds full.
  9. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the cupcakes to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
  11. In the meantime, beat together the softened cream cheese and butter until smooth and fluffy.
  12. Gradually add in the powdered sugar, followed by the milk and vanilla, mixing until everything is combined and spreadable.
  13. Once the cupcakes have cooled, frost each one generously with the cream cheese frosting.
