  • 1 cup diced ham leftover holiday ham works great
  • 1 can (15 oz) white beans like cannellini or navy beans, drained and rinsed
  • 1 medium carrot, diced
  • 1 stalk celery, diced
  • 1 small onion, chopped
  • 3 cups low-sodium chicken or vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • optional Fresh parsley for garnish

Method
 

Cooking
  1. Heat a large pot over medium heat and toss in the diced ham. Sauté until warmed through and slightly crispy, about 2-3 minutes.
  2. Add the onion, carrot, and celery to the pot. Stir together, letting the veggies soften for about 4-5 minutes.
  3. Pour in the chicken or vegetable broth and bring to a gentle boil.
  4. Stir in the drained and rinsed beans, thyme, and garlic powder. Reduce heat and let simmer uncovered for about 10 minutes, stirring occasionally.
  5. Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.

Notes
