  • 1 cup almond flour Alternatively use a seed-based flour for nut-free.
  • 1 cup rolled oats Use gluten-free oats if needed.
  • ½ cup chopped dried apricots
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
Wet Ingredients
  • ½ cup unsweetened almond butter Can replace with any nut butter of choice.
  • ¼ cup honey Maple syrup can be used for a vegan option.
  • 2 teaspoons harissa paste Adjust for desired spice level.
Optional Toppings
  • ½ cup sliced or chopped almonds For additional texture on top.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.
  2. In a large mixing bowl, combine almond flour, rolled oats, baking powder, and salt. Stir well.
  3. Add the almond butter, honey, and harissa paste to the dry ingredients and mix until well combined.
  4. Fold in the chopped dried apricots and optional sliced almonds.
Baking
  1. Transfer the mixture to the prepared baking dish, even out, and press down to hold together.
  2. Sprinkle a few almond slices on top and bake for 25-30 minutes.
  3. Allow to cool completely before lifting out with parchment paper and slicing into bars.
