Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken thighs Can be substituted with chicken breasts
  • 1 cup pineapple juice
  • ½ cup soy sauce Or tamari for a gluten-free option
  • ¼ cup brown sugar Brown or coconut sugar works well
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger Fresh ginger adds a lovely bite, if preferred
  • ½ teaspoon black pepper
  • 1 cup fresh pineapple, diced Canned works too, but fresh is better
  • to taste sliced green onions Optional garnish
  • to taste sesame seeds Optional garnish

Method
 

Preparation
  1. In a bowl, whisk together the pineapple juice, soy sauce, brown sugar, minced garlic, ginger, and black pepper to create the marinade.
  2. Place the chicken thighs in a resealable plastic bag or shallow dish and pour the marinade over them, ensuring they’re well-coated.
  3. Seal the bag or cover the dish and let the chicken marinate for at least 30 minutes or up to overnight in the fridge.
Grilling
  1. Preheat your grill to medium-high heat.
  2. Remove the chicken from the marinade (reserve the marinade) and place the chicken on the grill.
  3. Cook for about 6-7 minutes per side or until the chicken reaches an internal temperature of 165°F (75°C).
  4. Meanwhile, transfer the reserved marinade to a small saucepan, bring it to a simmer over medium heat, and reduce it for 5-7 minutes to thicken and enhance the flavor.
  5. Brush the grilled chicken with some of the reduced marinade for extra flavor and add fresh pineapple chunks to the grill for a couple of minutes until golden and caramelized.
  6. Remove everything from the grill once cooked and caramelized.
Serving
  1. Arrange the grilled chicken on a platter, topping it with the grilled pineapple.
  2. Drizzle with the additional glaze and sprinkle with sliced green onions and sesame seeds for added color and flavor.
