Preparation
- In a bowl, whisk together the pineapple juice, soy sauce, brown sugar, minced garlic, ginger, and black pepper to create the marinade.
- Place the chicken thighs in a resealable plastic bag or shallow dish and pour the marinade over them, ensuring they’re well-coated.
- Seal the bag or cover the dish and let the chicken marinate for at least 30 minutes or up to overnight in the fridge.
Grilling
- Preheat your grill to medium-high heat.
- Remove the chicken from the marinade (reserve the marinade) and place the chicken on the grill.
- Cook for about 6-7 minutes per side or until the chicken reaches an internal temperature of 165°F (75°C).
- Meanwhile, transfer the reserved marinade to a small saucepan, bring it to a simmer over medium heat, and reduce it for 5-7 minutes to thicken and enhance the flavor.
- Brush the grilled chicken with some of the reduced marinade for extra flavor and add fresh pineapple chunks to the grill for a couple of minutes until golden and caramelized.
- Remove everything from the grill once cooked and caramelized.
Serving
- Arrange the grilled chicken on a platter, topping it with the grilled pineapple.
- Drizzle with the additional glaze and sprinkle with sliced green onions and sesame seeds for added color and flavor.
