  • 1 pound boneless, skinless chicken breast, cut into 1-inch cubes
  • 1 cup fresh pineapple chunks, or canned for convenience
  • 1/4 cup soy sauce, or tamari for a gluten-free option
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger, or 1/2 teaspoon ground ginger
  • 2 cloves garlic, minced
Optional Add-ins
  • to taste red bell pepper, onion, or zucchini for extra veggies
  • to taste fresh cilantro or green onions for garnish
  • as needed skewers, soaked in water if wooden

Method
 

Preparation
  1. In a medium bowl, whisk together the soy sauce, honey, rice vinegar, ginger, and garlic to prepare the marinade.
  2. Toss in the chicken cubes, ensuring every piece is coated with the marinade. Cover and let marinate for 15-20 minutes.
  3. Soak wooden skewers in water if using; if you have metal skewers, this step can be skipped.
Assembly and Cooking
  1. Thread the marinated chicken and pineapple onto the skewers, alternating for a colorful presentation. Add veggies if desired.
  2. Preheat the grill to medium-high heat.
  3. Place skewers on the grill and cook for 10-12 minutes, turning every few minutes until chicken reaches an internal temperature of 165°F.
  4. Remove skewers from grill and let rest for a few minutes before serving. Garnish with fresh cilantro or green onions if desired.
