For the Hawaiian Chicken
  • 4 pieces boneless, skinless chicken thighs
  • 1/2 cup soy sauce (or tamari for gluten-free)
  • 1/4 cup brown sugar
  • 1/4 cup pineapple juice
  • 1 tablespoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1 pieces pineapple (for slicing, optional)
For the Coconut Rice
  • 1 1/2 cups jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 1 cup water
  • 1/2 teaspoon salt
  • 1 tablespoon sugar (optional)

Method
 

Marinating the Chicken
  1. In a medium bowl, whisk together the soy sauce, brown sugar, pineapple juice, ginger, garlic, and sesame oil until well combined.
  2. Place the chicken thighs in a resealable plastic bag or a shallow dish and pour over the marinade, making sure every piece is thoroughly coated.
  3. Allow it to marinate for at least 30 minutes, or a minimum of 10 minutes if you're short on time.
Preparing the Coconut Rice
  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  2. Combine the rinsed rice, coconut milk, water, salt, and optional sugar in a medium pot.
  3. Bring the mixture to a boil over medium-high heat, then reduce the heat to low, cover, and let it simmer for 18-20 minutes.
  4. Remove from heat and let it sit covered for an additional 10 minutes to absorb the coconut flavor.
Cooking the Chicken
  1. Heat a grill or skillet over medium-high heat.
  2. Remove the chicken from the marinade and grill or sear each piece for about 6-7 minutes on each side until cooked through with char marks.
  3. Optionally, grill the sliced pineapple alongside the chicken for added flavor.
Serving the Dish
  1. Fluff the coconut rice with a fork and serve topped with the grilled chicken.
  2. Add grilled pineapple for an extra touch.
