  • 1 cup diced apples Any variety of apples can be used.
  • ½ cup chopped walnuts or pecans Optional for extra crunch.

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease.
  2. In a large mixing bowl, combine rolled oats, whole wheat flour, baking powder, cinnamon, and salt. Mix well.
  3. In another bowl, mix together applesauce, honey, and eggs (or your chosen egg alternative) until smooth and slightly glossy.
  4. Gradually fold the wet ingredients into the dry ingredients, being careful not to over-mix.
  5. Fold in the diced apples and any nuts if using.
Baking
  1. Spoon the batter into the muffin tin, filling each cup about three-quarters full.
  2. Bake for 18-20 minutes, or until the tops are golden brown and a toothpick comes out clean.
  3. Let the muffins cool in the tin for a few minutes, then transfer to a wire rack.
