Ingredients
  

Dry Ingredients
  • 1.5 cups rolled oats Feel free to use gluten-free oats if needed
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
Wet Ingredients
  • 1 cup unsweetened applesauce (or mashed bananas for a twist)
  • 2 pieces ripe bananas (mashed, a natural sweetener)
  • 0.5 cup almond milk (or any milk of your choice)
  • 0.33 cup honey or maple syrup (for a vegan option, stick with maple syrup)
  • 1 teaspoon vanilla extract (optional, but highly recommended)
Mix-Ins
  • 0.5 cup raisins (you can substitute with dried cranberries)

Method
 

Preparation
  1. In a large mixing bowl, combine the rolled oats, baking powder, baking soda, ground cinnamon, and salt.
  2. In a separate bowl, blend together the applesauce, mashed bananas, honey (or maple syrup), almond milk, and vanilla extract until smooth and creamy.
  3. Pour the wet ingredients into the oats mixture and gently fold them together until just combined.
  4. Add in the raisins and carefully stir them in.
Baking
  1. Preheat your oven to 350°F (175°C) and prepare your mini muffin tin by greasing it or lining it with paper liners.
  2. Fill each cavity about ¾ full with the batter.
  3. Bake for about 12-15 minutes, or until a toothpick inserted in the center comes out clean.
  4. Let them cool in the pan for a few minutes before transferring to a wire rack to cool completely.
