  • 2 ripe bananas, mashed Sweet, ripe bananas lend natural sweetness.
  • 1 cup rolled oats Vital for texture.
  • 1 cup whole wheat flour Can substitute with any preferred flour.
  • 1/2 cup unsweetened applesauce Can substitute with Greek yogurt or nut butter.
  • 1/4 cup honey or maple syrup Adjust for desired sweetness.
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup milk Dairy or non-dairy.
  • 1/2 cup chocolate chips or nuts Optional for added crunch.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the mashed bananas with the applesauce or Greek yogurt until creamy.
  3. Stir in the rolled oats, then add the whole wheat flour, baking powder, baking soda, cinnamon, and salt. Mix gently until just combined.
  4. Gradually pour in the milk and sweetener. Fold in chocolate chips or nuts if using.
Baking
  1. Spoon the batter into a muffin tin lined with parchment cups or greased, filling about two-thirds full.
  2. Bake for approximately 18-20 minutes until golden brown, and a toothpick inserted comes out clean.
