Healthy Chicken Enchiladas

Delicious and wholesome chicken enchiladas made with shredded chicken, vibrant veggies, and a creamy sauce, all wrapped in whole wheat tortillas for a guilt-free meal.

Ingredients
  

Main ingredients
  • 2 cups shredded cooked chicken rotisserie chicken works great!
  • 1 cup black beans rinsed and drained
  • 1 each bell pepper diced (any color you love)
  • 1 small onion diced
  • 2 cups fresh spinach roughly chopped
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • 8 each whole wheat tortillas corn tortillas can work too!
  • 1 cup salsa choose your favorite
  • 1 cup Greek yogurt or sour cream if you prefer
  • 1 cup shredded cheese cheddar or Monterey Jack
Optional substitutions
  • shredded jackfruit or tofu for a plant-based version
  • low-sodium beans and salsa if you’re watching your sodium intake

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Heat a splash of olive oil in a large skillet over medium heat.
  3. Sauté diced onion and bell pepper for about 5 minutes until softened and fragrant.
  4. Add shredded chicken, black beans, chopped spinach, cumin, garlic powder, salt, and pepper, stirring together for another couple of minutes until warmed through.
Assembly
  1. Fill each tortilla with a generous amount of the chicken mixture and roll it up tightly.
  2. Place each rolled tortilla seam-side down in a greased baking dish.
  3. Pour salsa over the rolled enchiladas, ensuring each one is covered.
  4. Dollop Greek yogurt on top and sprinkle cheese over everything.
  5. Bake in the preheated oven for about 20-25 minutes until cheese is melted and bubbly.
Serving
  1. Let cool for a few minutes before serving.
  2. Serve with avocado slices, fresh cilantro, a light side salad, tortilla chips with salsa, or a drizzle of hot sauce if desired.

Notes

Feel free to mix veggies like zucchini or mushrooms for added depth. For a vegan version, use lentils or chickpeas and skip the cheese.
