Healthy Chicken Enchiladas

Ingredients
  

For the Chicken Filling
  • 2 cups shredded cooked chicken rotisserie chicken works great
  • 1 cup black beans rinsed and drained
  • 1 cup corn frozen or fresh
  • 1 cup diced bell peppers any color
  • 1 small onion diced
  • 1 cup fresh spinach chopped
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 juice of lime
  • to taste salt and pepper
For the Sauce
  • 1 cup salsa your favorite kind
  • 1 cup low-fat Greek yogurt or sour cream
  • 1 teaspoon taco seasoning optional for extra flavor
For Assembling
  • 6-8 pieces corn tortillas
  • 1 cup shredded cheese like cheddar or a Mexican blend

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a medium skillet over medium heat, sauté the diced onion until it becomes translucent, about 3-4 minutes.
  3. Stir in the bell peppers and cook for another couple of minutes until softened.
  4. Add the shredded chicken, black beans, corn, spinach, lime juice, and spices. Cook for 5-7 minutes, stirring occasionally.
Sauce Preparation
  1. Mix the salsa with Greek yogurt in a bowl to prepare the sauce.
Assembly
  1. Spread a thin layer of the sauce on the bottom of a baking dish.
  2. Take a tortilla, spoon in about 1/3 cup of the chicken mixture, roll it up tightly, and place it seam-side down in the dish. Repeat until all tortillas are filled.
  3. Pour the remaining sauce over the top and sprinkle with cheese.
  4. Bake in the oven for 20-25 minutes until the cheese is melty and golden.

Notes

Feel free to customize by using turkey or quinoa instead of chicken, or adjust veggies to seasonality. Can be made vegan with jackfruit and cashew cream.
