- Heat a large pot over medium heat and add the olive oil. Once it shimmers, add the chopped onion and sauté until translucent.
- Stir in the garlic, carrots, and celery. Allow the veggies to soften for another 5-7 minutes.
- Add the flour and cook for about a minute to eliminate the raw taste.
- Gradually pour in the chicken broth, scraping any bits from the bottom of the pot.
- Add the chicken pieces, thyme, salt, and pepper. Bring everything to a simmer and let bubble for about 15-20 minutes.
- Once the chicken is cooked, carefully transfer it to a plate and shred it with two forks.
- Return the shredded chicken to the pot along with the frozen peas and almond milk. Stir and let simmer for another 5 minutes.
- For a refreshing twist, add a splash of lemon juice before serving.
