Ingredients
  

Dry Ingredients
  • 1 cup rolled oats
  • 1 cup whole wheat flour or gluten-free flour for a gluten-free version
  • 1/2 cup coconut sugar or brown sugar
  • 1/2 teaspoon baking soda
  • a pinch salt
Wet Ingredients
  • 1/2 cup maple syrup or honey
  • 1/4 cup coconut oil (melted) or unsalted butter
  • 1/2 teaspoon vanilla extract
Add-Ins
  • 1/2 cup dark chocolate chips at least 70% cocoa
  • 1/2 cup dried cranberries can substitute with raisins or cherries

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the rolled oats, whole wheat flour, coconut sugar, baking soda, and salt. Mix well.
  3. Make a well in the center of the dry ingredients and pour in the melted coconut oil and maple syrup, followed by the vanilla extract. Mix until just incorporated.
  4. Fold in the dark chocolate chips and cranberries.
Baking
  1. Line a baking sheet with parchment paper and scoop out the cookie dough, shaping them into small balls with some space in between.
  2. Bake for about 10-12 minutes or until the edges are lightly golden. The center should look slightly underdone.
  3. Let the cookies cool on the tray for a few minutes before transferring to a wire rack.

Notes

For a vegan version, use maple syrup and coconut oil. Feel free to substitute cranberries with your favorite dried fruit or add nuts for extra crunch.
