Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the rolled oats, whole wheat flour, coconut sugar, baking soda, and salt. Mix well.
- Make a well in the center of the dry ingredients and pour in the melted coconut oil and maple syrup, followed by the vanilla extract. Mix until just incorporated.
- Fold in the dark chocolate chips and cranberries.
Baking
- Line a baking sheet with parchment paper and scoop out the cookie dough, shaping them into small balls with some space in between.
- Bake for about 10-12 minutes or until the edges are lightly golden. The center should look slightly underdone.
- Let the cookies cool on the tray for a few minutes before transferring to a wire rack.

Notes
For a vegan version, use maple syrup and coconut oil. Feel free to substitute cranberries with your favorite dried fruit or add nuts for extra crunch.
