  • 2 cups rolled oats
  • 2 pieces ripe bananas, mashed Ensure they are ripe for better sweetness.
  • 1/2 cup nut butter (peanut or almond) Can substitute with sunflower seed butter for nut-free version.
  • 1/4 cup honey or maple syrup Maple syrup can substitute honey for vegan option.
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips or dried fruit (optional) Choose based on preference.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the mashed bananas, nut butter, honey (or maple syrup), and vanilla extract. Mix until well combined.
  3. Stir in the rolled oats, baking soda, and salt. If using chocolate chips or dried fruit, add them in.
  4. Scoop out tablespoon-sized portions and place them on the baking sheet, flattening them slightly as they won't spread much.
  5. Bake for 12-15 minutes or until the edges are golden brown.
  6. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
