Preparation
- Mix the peanut butter, honey, vanilla extract, and salt in a mixing bowl until smooth and creamy.
- If using oats, fold them into the mixture gently.
- Shape the mixture into egg shapes using a cookie scooper or spoon and place them on a baking sheet lined with parchment paper.
- Freeze for about 15 minutes until they firm up.
Melting Chocolate
- In a microwave-safe bowl or over a double boiler, combine chocolate chips and coconut oil.
- Microwave in 30-second intervals, stirring in between, until smooth and glossy.
Coating & Hardening
- Dip each egg into the melted chocolate using two forks to allow excess chocolate to drip off.
- Place them back on the parchment paper and let the chocolate harden.
- Refrigerate for about 30 minutes.
