- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and cook for about 4-5 minutes until tender and translucent.
- Add the minced garlic and chopped bell pepper, stirring for another couple of minutes.
- Toss in the diced zucchini, black beans, and kidney beans, then stir well.
- Add the canned tomatoes along with their juices, chili powder, cumin, smoked paprika, and season with salt and pepper. Stir to combine.
- Pour in the vegetable broth and bring to a gentle boil.
- Stir in the elbow macaroni, lower the heat, and cover the pot. Let it simmer for about 10-12 minutes, stirring occasionally.
- When the pasta is cooked, gently fold in the corn and warm through for a couple of minutes.
