Ingredients
  

For the cake layers
  • 1 package yellow cake mix (or your choice of flavor)

For the creamy layer
  • 1 package 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup whipped topping (like Cool Whip)
For the topping
  • 1 can 20 oz crushed pineapple, drained
  • 1 cup shredded coconut (optional)
  • 1 cup chopped nuts (optional)

Method
 

Preparation
  1. Preheat your oven according to the instructions on the cake mix package.
  2. Prepare your cake layers as directed, usually by mixing the ingredients and baking them in two round pans.
  3. Once baked, allow the cakes to cool before removing them from the pans.
Cream Layer Preparation
  1. While the cakes cool, beat the softened cream cheese in a bowl until smooth.
  2. Gradually mix in the powdered sugar until well combined.
  3. Gently fold in the whipped topping.
Assembly
  1. Place one cake layer on a serving platter.
  2. Spread a generous layer of the cream cheese mixture on top.
  3. Spoon out the drained crushed pineapple, spreading it evenly.
  4. If desired, sprinkle shredded coconut or chopped nuts over the pineapple.
  5. Place the second cake layer on top and repeat the process: cream cheese mixture, pineapple, and any optional toppings.
  6. Chill the cake in the refrigerator for at least an hour before serving.
