Cooking
- Heat a large skillet or wok over medium-high heat and add the sesame oil.
- Once hot, add the diced chicken, season with salt and pepper, and cook for about 5 to 7 minutes until browned and cooked through.
- Push the chicken to the side and pour in the beaten eggs. Scramble gently until just set, then mix into the chicken.
- Add the mixed vegetables and minced garlic to the skillet. Stir-fry until the vegetables are tender, about 3 to 4 minutes.
- Add the cooked jasmine rice, breaking up any clumps. Pour in the soy sauce and oyster sauce, mixing thoroughly.
- Cook for another 3 to 5 minutes, stirring frequently to ensure the rice absorbs the flavors and achieves a slightly crispy texture.
- Toss in the chopped green onions just before serving.

Notes
This dish can be served alone or elevated with crispy spring rolls or a refreshing side salad. Add sesame oil and sesame seeds for a gourmet finish. For variety, swap chicken for tofu or tempeh to make it vegetarian.
