Preparation
- Heat a splash of olive oil in a skillet over medium heat.
- Season the chicken breast with salt and pepper, then cook for about 5-7 minutes per side, or until it’s cooked through and browned.
- Once done, remove from heat and let rest for a few minutes before slicing into bite-sized pieces.
Mixing and Serving
- In a large bowl, mix the cooked quinoa with half of the BBQ sauce.
- Layer the quinoa at the bottom of each bowl, then arrange the sliced chicken, cherry tomatoes, corn, black beans (if using), and mixed greens on top.
- Sprinkle sliced avocado on top, then drizzle with the remaining BBQ sauce and ranch dressing.
- Add optional toppings like green onions, cilantro, or cheese if desired.
