  • cup honey or maple syrup (for a vegan alternative)
  • 2 large eggs Can be replaced with flax eggs for a vegan option.
  • 0.5 cups almond milk (or any milk of your choice)
  • 1 teaspoon vanilla extract

  • 1 cup add-ins (like berries, nuts, or chocolate chips)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together whole wheat flour, baking soda, baking powder, and salt.
  3. In a separate bowl, combine Greek yogurt, honey (or maple syrup), eggs, almond milk, and vanilla extract. Mix until smooth.
  4. Fold the dry ingredients into the wet mixture, being careful not to over-mix; it’s okay if there are some lumps.
Baking
  1. Add your choice of mix-ins and stir gently.
  2. Line a muffin tin with paper liners or grease lightly. Spoon the batter into each mold, filling them about ¾ full.
  3. Bake for about 18-20 minutes, or until a toothpick comes out clean.
