Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together whole wheat flour, baking soda, baking powder, and salt.
- In a separate bowl, combine Greek yogurt, honey (or maple syrup), eggs, almond milk, and vanilla extract. Mix until smooth.
- Fold the dry ingredients into the wet mixture, being careful not to over-mix; it’s okay if there are some lumps.
Baking
- Add your choice of mix-ins and stir gently.
- Line a muffin tin with paper liners or grease lightly. Spoon the batter into each mold, filling them about ¾ full.
- Bake for about 18-20 minutes, or until a toothpick comes out clean.
