Ingredients
  

Pasta and Vegetables
  • 8 oz whole grain pasta (rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/2 cup red bell pepper, chopped
  • 1/4 cup red onion, finely chopped
Tuna and Dressing
  • 1 can (12 oz) tuna packed in water or oil, drained
  • 1/3 cup Greek yogurt (or mayo)
  • 2 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped (optional) Adds color and flavor

Method
 

Preparation
  1. Cook whole grain pasta according to package instructions with a pinch of salt.
  2. Once cooked al dente, drain and rinse under cold water.
Mixing Ingredients
  1. In a large bowl, combine drained tuna, cherry tomatoes, cucumber, red bell pepper, and red onion.
Making the Dressing
  1. In a separate bowl, whisk together Greek yogurt, Dijon mustard, lemon juice, salt, and pepper.
  2. Pour the dressing over the tuna and veggies, then fold in the cooled pasta until well-coated.
Final Touch
  1. Sprinkle with fresh parsley if using, and chill in the fridge for at least 15 minutes before serving.
